I love Okra—especially in Pinakbet and few other Filipino dishes. Okra is widely available in the Asian region and is used in many different dishes.
There has been some studies done on this vegetable the result shows, that if you are diabetic, it can actually be good for you. What Okra does is it helps reduce to absorb glucose which then reduces your sugar levels. Look, this ais a vegetable and like good natural foods, it has a lot of good properties that are good for us. Okra is no different, it has a good source of fibre which helps your digestive system, low glycemic index which is good for diabetics, it may help lower your cholesterol level, a good source of anti oxidant which helps prevents cancer, ageing and heart disease.
There are many ways to cook Okra alone, you can fry it, boil it, mix it with other vegetables, bake it. I like Okra when it's slimey, there's a liquid in Okra that if you cut or say boil it, it release it and becomes slimely. If you don't like a slimey Okra, cook it as a whole and fry it or bake it. if you If you fry or bake the Okra, then it won't release that liquid to make it slimey.
This photo though, is an easy recipe, boiled Okra garnished with onions. You can eat it like this, but being Filipino, we love dipping it in soy sauce and vinegar.
